Homemade butter chicken without butter:

 

A milder curry compared to other Indian curries makes Butter Chicken a favorite dish among families with little ones. You can certainly add as much or as little spices as your heart desires. In other words, YOU are in total control of how spicy you make it.

 The juicy and tender, yogurt marinated chicken makes it’s more delicious and adds more taste to it. The blended runny paste of almonds adds more flavor and creaminess to it and render it to the heart-healthy dish.

 

INGREDIENTS for Special Butter chicken without cream:

The only ingredients you need to start this recipe at home are:

 

For the Chicken:

·         450 grams boneless chicken (cut into bite-sized cubes)

·         2 tbsp. refined oil/ olive oil

 

For the Marinade:

·         4 tbsp. whisked yogurt

·         3 tsp. ginger-garlic paste

·         1 tsp. coriander powder

·         1 tsp. Cumin powder

·         ½ tsp. turmeric powder

·         1 tsp. red chili powder

·         Juice of 1 lemon

 

For the Gravy:

·         4 medium-sized ripe red tomatoes peel it off and blend it well

·         10 almonds, peel off & blended to a paste-like consistency with 3 to 4 Tablespoons of water

·         2 tbsp. refined oil

·         1 medium-sized onion, finely chopped

·         ½ -inch ginger, finely chopped

·         1 large green chili, finely chopped

·         ½ tsp turmeric powder

·         1 tsp red chili powder

·         ½ tsp cumin powder

·         1 tsp coriander powder

·         ½ tsp sugar

·         Salt to taste

 

Garnish:

·         2 Tablespoons chopped fresh coriander leaves

 

Method of Preparation:

1.       In a mixing bowl, mix yogurt, red chili powder, turmeric powder, cumin powder, coriander powder, and ginger garlic paste.

2.       Add the boneless chicken pieces to the marinade and ensure all the pieces are coated equally with the marinade.

3.       Add some lemon juice and refrigerate it for at least 2 hrs.

4.       Put almonds and water in a blender and blend everything well to make a smooth paste.

5.       Shallow fry the chicken pieces and cook till the chicken has a charred edge.

6.       Add oil to it and add onions and chilly, garlic as well.

7.       Cook it for a couple of mins.

8.       Add red chili powder, turmeric powder, coriander powder, cumin powder and mix everything well.

9.       Add blended tomato paste to it and let it mix well with the spices.

10.   Simmer the flame and let it cook

11.   Add salt, sugar, almond paste to it and mix well

12.   Add the shallow fried chicken pieces to the gravy, cover the lid, and cook it thoroughly.

13.   Garnish with coriander leaves, in a platter, and serve the butter chicken.

If you want a more vibrant sauce, feel free to add a couple of tablespoons of butter (or ghee) right at the end, letting it melt though the sauce before serving.
